Fresh Oven-Baked Tuna Steaks with Artichokes

Artichokes with Tuna Steaks

Serving Size: 4

Ingredients:
4 fresh tuna steaks
2 large eggs
1 tablespoon milk
3 tablespoons bread crumbs
1/4 cup olive oil
2 large garlic cloves, minced
6 large marinated artichoke hearts, reserving marinade
sea salt and fresh ground pepper, to taste
1 tablespoon fresh parsley, finely chopped

Directions:
1. In small mixing bowl combine eggs and milk, whick until smooth.
2. In another small bowl combine bread crumbs, salt and pepper.
3. In a large skillet add olive oil over medium-high heat. Preheat oven to 350 degrees.
4. Dredge tuna steaks in egg, then dip in crumb mixture on both sides.
5. Saute steaks in oil, 2-3 minutes each side.
6. Place steaks in glass baking dish. Drizzle some of the artichoke marinade over steaks and place artichokes next to the steaks.
7. Bake for 20 minutes. Garnish with parsley.

    I like the recipe but wanted more artichokes with the tuna since they compliment the dish so well. I added canned artichoke hearts. I cut a 1/2 inch deep “X” in the cut end of each heart, opened it up to give it a floral appearance, and arranged them on the steaks by themselves and around the steaks with the pieces of the marinated artichokes. I then drizzled the marinade from the marinated hearts over the prep being sure to fill to capacity the opened artichokes “florettes”. I used one jar of marinated and one can of non-marinated hearts for two 1/2 lb. steaks but there was ample liquid for another steak. I offered a low-salt Tamari sauce as an optional dip.
    The artichokes compliment the tuna and tone the fish well.
    This dish is restaurant quality and very simple to prepare.
